I've just installed ARS Server 5.1.2 as the second server on my dev
machine. Now I'd like to install HD 5.0 on this new server. The main
goal is to be able to compare the highly customized HD 5.0 server with a
5.0 server that has had no modifications.

However, I'm unable to determine how to direct the installer to my new
server; it wants to overwrite my existing HD installation on my 'old'
ARS server.

Any clues?

Install the second server to a second tablespace. Otherwise, when you
go to install HD5.0 it will try to overwrite your highly customized
system.
